Construction on popular Chicago eatery starts in Normal

The opening isn't for a few more months, still the Twin cities today got its first taste of Portillo's. 
   
Portillo's Restaurant is going up where the old Motel 6 used to be here in Normal off Veterans Parkway. Portillo's C.E.O calls it the perfect location for the Chicago based restaurant. 

"A lot of people are transplants from Chicago.  You got a great university, a lot of people come down here from school.  You've got a great community.  You've got business, you've got retail," said Portillo C.E.O. Keith Kinsey.

Portillo's officially held a ground breaking Thursday morning.      But contractors have already began foundation work on the 9,000-square foot facility.  In addition to the construction workers Portillo's says more than 200 jobs will be coming to the area.

Most of the company's 47 restaurants are in the Chicago area but Champaign and Normal are among the company's expansion sites.

"It's really a good project for the town of Normal.  It's very highly sought after restaurant in Midwestern United States.  It really is gonna help open an area for redevelopment in our community," said Normal Mayor Chris Koos.

In December the Normal Town council approved $1.8 million dollars in tax credits for Portillo's.  The restaurant is expected to be completed in August.
