PEORIA, Ill. -- Edge by Chef Dustin Allen is a Farm-to-Table restaurant in Peoria's Junction City.
Allen grew up in the farm country of Pike County, Illinois. So he makes it a point to support area farmers buying local food that often arrives in his kitchen hours after its been harvested.
"My menu changes nightly based on what is available. I don't order my produce," said Allen. "Its what comes in to me from the farms and what they have available. Most everything makes it to our plates within 48 hours of being out of the ground."
Some of that ground belongs to Princeville farmer Jim Buckley. He's one of about 60 area farmers Allen buys from.
"When you go to a place like this that's getting fresh every single day the favor is right there," explained Buckley.
Edge is upscale dining in a casual atmosphere. The night I was there entrees started at $25.
More than 50 varieties of wine are available, including some imported from France.
As they say, you get what you pay for and my meal was fantastic.
I began with an a appetizer of pan seared scallops, served with green garlic, roasted tomatoes and 18 year-old balsamic vinaigrette. I like scallops and these were amazing.
Keeping with the seafood theme, my main course was a Roasted Faroe Island Salmon. It was served with a cauliflower puree - which really brought out the flavor of the meat - and was dressed with greens and white wine and butter. It was outstanding.
With a soft drink my bill was just over $46 before tip.
Edge by Chef Dustin Allen is open Monday through Saturday for dinner starting at 5 pm.
