By WKBW DirectorsIngredientsBarbecue SaucesAir Date: 5/15/2008 Mr. Food's RV Road Trip: South Carolina Mustard Barbecue Sauce About 1-2/3 cups 1 cup cider vinegar 2/3 cup yellow mustard 1/2 cup packed light brown sugar 2 tablespoons butter 1 teaspoon soy sauce 1 teaspoon chili powder 1/4 teaspoon crushed red pepper 1 teaspoon black pepper In a medium saucepan, combine all ingredients over medium heat. Bring to a boil and continue to boil for 5 minutes or until sauce thickens, stirring constantly. Serve warm. SERVING TIP: This is a super sauce that's good for basting or as a warm dipping sauce. White Barbecue Sauce About 3 cups 2 cups mayonnaise 1/4 cup white vinegar 1/4 cup lemon juice 1 tablespoon Worcestershire sauce 2 tablespoons sugar 2 tablespoons black pepper In a medium bowl, combine all ingredients; mix well. Serve, or cover and chill until ready to use. SERVING TIP: Serve over roasted or smoked chicken, turkey or pork. Honey Bacon Barbecue Sauce About 3-1/2 cups 1/2 pound bacon, chopped 1 medium onion, diced 1 garlic clove, minced 1 can (14 ounces) ready-to-serve chicken broth 1 bottle (12 ounces) chili sauce 1 cup honey 2 tablespoons lemon juice 1 teaspoon hot pepper sauce 1 teaspoon salt 1/2 teaspoon black pepper In a large pot, cook bacon 5 to 6 minutes over medium-high heat, or until lightly browned, stirring occasionally. Add onion and garlic; cook 2 to 3 minutes, or until onion is tender, stirring constantly. Add remaining ingredients and bring to a boil. Reduce heat to medium-low and cook 40 to 45 minutes, or until sauce thickens, stirring occasionally. Serve warm. SERVING TIP: This is great served over meat or poultry. |
