Marinated Summer Berries
Looking for a way to satisfy your sweet tooth? Try this light and refreshing summer treat that will help beat the summer heat! Ingredients
2 Tbsp sugar
Grated zest 1 lemon Grated zest 1 orange 1 cup water 1 Tbsp freshly squeezed lemon juice 1 Tbsp freshly squeezed orange juice ¼ tsp pure vanilla extract ½ pint blueberries, rinsed ½ pint blackberries, rinsed ½ pint strawberries, rinsed, tops trimmed, halved or quartered, if large 1 pint vanilla frozen yogurt
DirectionsDirections 1. In a small saucepan, combine the sugar, citrus zest, and water. Bring to a simmer and cook until the sugar has dissolved. 2. Remove from the heat and add the citrus juices and vanilla. 3. Combine the berries in a bowl and pour the warm syrup over the berries. 4. Marinate the berries at room temperature for 30 minutes. 5. Serve marinated berries over a scoop of vanilla frozen yogurt, angel food cake, or mixed in with your favorite yogurt and granola.
